A love letter to the aloo tikki from the street carts of Bombay.

Golden mashed potato is the base, packed with six more vegetables: cauliflower, cabbage, carrots, peas, spinach and onion. Ginger, garlic and green chilli give it that proper street-cart warmth, tomato rounds it out, and fresh coriander keeps it bright. Then comes the chaat masala, tangy and salty, the flavour that makes street food taste like street food. Cheddar melts through the middle for richness.

A crisp breadcrumb crust gives way to a soft, spiced centre. Nostalgic, warming, and very hard to put down.
